There was a local ad on Facebook today offering Greek lessons. I was interested until I read a part of her ad which said the lessons were for those who want to ‘immerge’ themselves in local culture.

Yep, it does mean to kind of "blend in", "be a part of". I reckon Aud, you've got mistaken with either "emerge" or "immerse". Immerse would be ok to use in the learning sense too.
