Hearthfire is an awesome addon. You'll get a note from a Jarl at about level 8 - 10. Go follow up and you'll be given a chance to literally build your own house. I wasted 30 odd hours building and decorating a place. Even mined my own ore to make the building materials Cheesy

Skyrim is excellent I played it almost every day for a year when it came out with the Heathfire and Dawnguard too which are good add ons that add extra lifespan with some good quests.

Fallout New Vegas is brilliant, I have completed it 4 times with different paths now.

You don't actually have to talk to anyone if you don't want to. It's the very definition of open-ended sandbox
