Second batch of pumpkin soup done. Oxtail soup on the go and a late start to the Christmas cake. Soaking the fruit overnight in a mixture of aged Metaxa Brandy, Dark Rum and a cheap whisky from Thailand called Hong Thong… just need to deal with the loin of pork later by removing the tenderloin (freeze and use for a pork stir fry), cut two chops off and freeze for another meal some when, score the remainder and roast tomorrow with aged chunky homemade apple sauce. Oh and made the Christmas pickled eggs too.
