But rolling your sleeves up means that if you have to put on a jacket in a hurry you either have to stop and roll them down again or have bulges under your jacket sleeves. Short sleeve ones are loads easier to iron as well.

I don't actually own any short sleeve formal shirts - I was just pointing out some of the downsides. As I always used to wear shirts needing cufflinks before starting my own business, the bulgy jacket sleeve thing was an issue if I had to go to reception quickly.
