Don't fry them in butter, get some garlic granules and put a shit load of olive oil in a pan, throw in the garlic for only a few seconds until it starts to brown, then fish the garlic out (as it will go sticky and brown quite quick), then your oil will taste of roasted garlic.

Bung in the potatoes and some fresh herbs when they're nearly done.

ooooh I always put garlic or onion salt on my roasties crisps them up lovely!
