Going to Newquay next week Monday to Friday. Weather permitting we just plan on visiting different beaches during our stay, do a fishing trip, visit padstow for a day and maybe the aquarium.
Any other suggestions or things to do within a 30/45 min drive from Newquay? We don't want to spend much time driving around.

The Eden Project is pretty well done if you're into more nature-y stuff. Padstow is a lovely place too.

can't remember if you have kids/ages if you do
Perranporth beach is nice
Healey's cider farm/Ice cream factory down the same road, there's not loads to do there other than a few animals, old cider equipment, big shop and cafe but it's mostly free (pay for tractor ride/cafe).
there's usually paulos (it's Paolo) Circus just out of Newquay
you can hire a bike in Padstow and cycle the camel trail.
lots of pubs and smaller beaches. somewhere like the bogie Inn might have some live music on and good views over Crantock bay

Flambards Theme Park at Helston, about 30 miles away, should be able to drive it in under an hour.

Lappa Valley is great for young kids.
And a trip to Healey's Cider Farm is a must to stock up on Rattler. Much like Guinness, I find it tastes best at the source and doesn't travel well.

Isn't Monday a BH? Traffic can get pretty bad down there
