So how do you capture something like that, other than with split second timing and a quick shutter?
(Guessing) Don't you set the camera on 25-40+ fps and then just pick out the frame that's got the best capture? Or maybe he's got really good reactions?

Get the camera over a sink on a tripod - have the tap dripping very slowly - then try to press the shutter at the right time !! Takes a fair bit of messing around but I was quite pleased with how they turned out.... Tried on a lot of different settings - the "tall" one was with a Nikon D300 - Exposure 1/200, ISO 200, F/16 (if that helps  )

I'd like a better camera and an idea of what I was doing when I see nice things. These were taken on a crappy phone cam. Top and bottom ones could have been especially decent if an actual photographer had taken the shots, rather than an uneducated gimp

Mine were taken on a crappy phone camera too, but that's the joy of crappy phone camera's. I don't walk around with a camera, but I do with a phone.
