I want to get about $200 worth, can i just go to the post office or M&S and get them there and then, or do they have to be ordered in advance?

If you're gettin US $ or UK £ (travellers cheques in those currencies) you can just go to M&S on the day mate, not need to pre-order.

Yuo don't need to pre-order travelers cheques, only large amounts of cash

how about £400 of $'s? $800. would i need to order that?

I'd be very surprised if your local M&S exchange would have those kind of sums in house.  Don't think you'd need to order.  Obviously don't leave it til the day before you go but I'd imagine they'd sort you out there and then fella.
