Like small pieces of pasta. I love it. Two main sorts, at least that i know of and you'll see commonly: Moroccan (tiny) and Israeli (slightly larger).

Get a bag of it, pour some in a bowl, cover it in boiling water, with flavourings, in a bowl for about 3 minutes. Done.

  I think the fine grained is based on semolina wheat, whereas the more coarse grained is based on bulgur wheat.

  I prefer the coarse grained....good for making tabouleh.
