can't you sign up for a year, but have a statutory 30 day cooling off period where you can cancel it, so just pay for the 30 days ?

I'd probably say your best bet is to get your dad to ring up and ask to add you to the policy for a day

Ask them? I know people ensure their cars for race days and the such, so they might be able to do you a deal?

It's not something I've ever done.
