Milk is always best, just like it is better to use milk rather than water when making porridge.

My firt ever part time job was as a chef in a restaurant and I was in charge of the omelettes.

Cook your ingredients in the pan first, spread out evenly then add the mix for a more even texture.  Sprinkle with two cheeses, under the grill to melt and cook the top off then in one even movement you should fold the omelette out and over itself onto the plate.

I’ve tried all sorts of combos but can’t beat a good solid 3 egg, - 3 cheese omelette.
