Almost certainly pigs blood. Mix with fat, barley and oats and, voila, a disgusting concoction.

That makes the sausage, then you slice it and fry it off in a pan (it blackens, hence it's name). Like Chorizo.

At the risk of bring all hell down upon me, you can get a damn good vegan version of a black pudding in Tesco up here (as part of a " Scottish breakfast pack" with a square sausage and a link (normal) sausage.

The Irish do a cracking black pudding. Not found anything as good in England yet.

White pudding also in Ireland, think it’s much the same but without the blood

Yeah I love both black and white pudding. I'm not completely certain but think you might be right about the white just being bloodless.

Congealed blood
The blood in black pudding is not congealed. It should be free flowing. Sadly getting fresh pigs blood is pardon the and not intended pun, bloody difficult. Dried blood, now that apparently is more s easy but somehow does not quiet bit the mark as fresh does. Also has to be cooked which comes under different H&S and food Hygiene regulation for preparing food stuffs.
