Is it a piece of piss, or will I flood the kitchen?

Piece of piss, i asume that you have flexible connections? These should have gate valves fitted, but just to make sure , isolate the main hot and cold water feed ball a fix valves and bobs your mums brother.

That's not an either/or question - just because it's a piece of piss doesn't mean you won't flood the kitchen (speaking as someone else who would)

Easy as long as you can turn off the water

Other things to note - don't kink the outlet pipe - they usually come with a "bend support" thingy (technical term)  and also ensure that the outlet pipe is well fitted to the main outlet or else this will flood the kitchen with dirty diswasher water.

I've replaced washing machines and they are a pop, never replaced a dishwasher and looking at the unit I can't see any pipework except for what looks to be the isolation valves. Just wondering where to start.

If you can replace a washing machine then a dishwasher is as easy, very similar connections.
