Not dangerous at all really. Most are just used for advertising purposes i.e. you visit site

looking at broadband deals, then when you visit site
y
you'll get relevant adverts about broadband deals.
You can disable cookies in your browser, but that's not always the best solution because some cookies are necessary e.g. to remember your login for websites.
If you run Firefox then there are add-ons that can specifically block tracking cookies.
