Really depends on what style of music you are in to.  Freddie Mercury was ace, but I love Lionel Richie, Elton John and even Neil Sedaka.  I have very varied tastes!  Would have to include Tina Turner, Mary Wilson and Shirely Bassey among the female side.  Big shout too for Dusty Springfield and the amazing voice of Karen Carpenter.

Such a wide field Arriba - are you talking in the last 10, 20, 30, 40, 50, 60 years, every era will have a legend, depending on the generation you were born in.
If I made my selections most on here would wonder who the hell I was talking about.

I've always thought Roger Daltrey to be one of the great male voices, particularly on Who's Next and Tommy. Tremendous frontman too.

As for female... I think I'd probably go for Beth Gibbons from Portishead. A haunting voice.

Nina Simone absolutely kills it for best female...........No one can top her, surely?

Male would take too much thought for this time of night.
