Unless a steak is rare its not worth bothering with....in France, you get it tartare which is raw and good.....although a bit thin.
We're a bit paranoid here that unless its cooked you'll get a disease or something
i think it's just that most of us are far enough along in the evolution process to want our food
cooked 
i have medium, with peppercorn.
there's definitely no point having a well done steak.
