Depends what sort of vegetarian they are.....but there are lots of things you can do....for example substitute Quorn for meat.....make a toad in the hole...Quorn sausages are reasonable. I sometimes make a vegetable pie, which is pretty good, by any standards and consists of plenty of different veg, leeks, carots, sprouts, swede, mushroom, shallots etc partly boiled according to their hardness, then put into a pie with a marmite style vegy gravy, using the stock from the veg. Arrowroot to make the gravy thick....then put the lot into a lidded pie and cook.....
