Tasty, healthy and easy to make. OK, so they aren't really healthy but who gives a shit. How to make them better though? Anybody have any tips on how to make them crispier and more delicious than they already are? As for making them yourself, you can nick Heston Blumenthal's method of simmering them in salt water before frying, which works really well but is a bit of a faff. I had them frying away but needed to unplug the fryer for a sec but, for whatever reason, forgot to plug it in again. So, when I came to check on them they were just sitting there in fat that was nowhere near hot enough for them to fry in. Took them out, heated the fat up again and then put them back in. The result? Fluffy on the inside and crispy on the outside. Best chips I've had for a long, long time. I think the trick that made it work this time was having them sit in the oil for a while before noticing it wasn't hot enough.
