Oyster sauce is an incredible ingredient.

Although it can be variable depending on which brand you buy. I found a bottle of some weird stuff in a shop in Broad Street years ago that went into a beef and broccoli stir fry that I have never matched since. I think it was called 'Kum Kwee Kwok' or similar.

If you can buy it in Thailand BK, ship me a case please.

I'd imagine you could use just about anything, it's all about the basil. Just start frying some up and you'll see (or smell) what I mean (It has to be the right basil though, the Thai stuff).

I cooked a chicken stir fry minus the oyster sauce the other day. It wasn't the same.

In keeping with the oyster sauce theme.

Today, I shall opt for: Chicken, fried in oyster sauce with garlic, spring onion and cashew nuts. I have yet to decide whether or not I want mushrooms.

Since moving to China I think I have eaten Oyster sauce maybe once or twice.  In fact I think I eat less Chinese food now than I did in the UK.
