That sounds very nice....... Title: Re: May I recommend: Post by: Talk Talk on Monday, January 11, 2010, 21:10:52 Oyster sauce is an incredible ingredient.
Although it can be variable depending on which brand you buy. I found a bottle of some weird stuff in a shop in Broad Street years ago that went into a beef and broccoli stir fry that I have never matched since. I think it was called 'Kum Kwee Kwok' or similar. If you can buy it in Thailand BK, ship me a case please. Title: Re: May I recommend: Post by: Freddies Ferret on Monday, January 11, 2010, 21:11:45 could i swap the chicken for white fish?

Title: Re: May I recommend: Post by: BANGKOK RED on Monday, January 11, 2010, 21:24:22 could i swap the chicken for white fish? I'd imagine you could use just about anything, it's all about the basil. Just start frying some up and you'll see (or smell) what I mean (It has to be the right basil though, the Thai stuff). Title: Re: May I recommend: Post by: Simon Pieman on Monday, January 11, 2010, 23:10:12 I cooked a chicken stir fry minus the oyster sauce the other day. It wasn't the same.
Title: Re: May I recommend: Post by: BANGKOK RED on Tuesday, January 12, 2010, 09:31:27 In keeping with the oyster sauce theme.
Today, I shall opt for: Chicken, fried in oyster sauce with garlic, spring onion and cashew nuts. I have yet to decide whether or not I want mushrooms. Title: Re: May I recommend: Post by: china red on Tuesday, January 12, 2010, 09:36:26 Since moving to China I think I have eaten Oyster sauce maybe once or twice. In fact I think I eat less Chinese food now than I did in the UK.
Title: Re: May I recommend: Post by: BANGKOK RED on Tuesday, January 12, 2010, 09:45:05 Chinese food is generally awful, nothing like you get at the chinky back in the UK.

Title: Re: May I recommend: Post by: Ardiles on Tuesday, January 12, 2010, 10:14:33 Do you seriously mean to say that the prawn cracker is not a dietary staple in China?

Title: Re: May I recommend: Post by: BANGKOK RED on Tuesday, January 12, 2010, 10:54:00 Probably. I wonder if they pop to the "Englishy" for fish and chips.
