Best thing to do with a marrow is to stuff it... peel cut in half and slit, scrape out the seeds, then fill with something either meaty mince or beany...I use butter beans, tomato cheese, onions and herbs. Whack in the oven...the marrow absorbs the flavours of the filling, and goes squishy, very nice indeed. Sprouts are great & Marrow is as has been said best stuffed with mince I used to have a similar opinion as a kid, but discovered that the broad bean is right up there in the pantheon of great tasting vegetables as an adult. Like all veg...getting them in the right condition and cooking them properly does make a lot of difference...for example runner beans, lovely if tender, a bit off if stringy. The trick with swede is to bring out the flavour with nutmeg and mashed with a small amount of cream. Lovely. Brussels are lovely, I'll eat them any way I can. But my fave is to fry them off in a pan with some bacon/pancetta. Thanks Jamie Oliver. Roasted butternut squash with Northwood Fire seasoning is a gift from the gods.
