Title: Scallops
Post by: michael on Sunday, March 1, 2009, 13:16:37
Having never tried them before, I am rather keen to add a good scallop recipe to my repertoire.

Any ideas or suggestions?

Also, I understand that the fishmongers along Groundwell Road has shut - the last remaining one in our great town. Where is the next nearest alternative vendor of fish and seafood?

Tesco's fish counter might be a possibility....

Sadly the supermarket produce is not fresh enough for my liking.

I am guessing there is one in Marlborough?

Fair enough...don't know of one in Marlborough, but you're ruling Waitrose out?

There used to be a place in Ciren, but a long time since I've been there

Simply is the answer. Pan fried with a sprinkling of salt & pepper, squeeze of lemon juice, serve with a nice salad and job done.

I'm not a huge fan of the coral mind.

Oh, and IMO, Morrison's have the best fresh fish counter of any of the major supermarkets. And we buy a lot of fish/seafood (normally have 2 or 3 fish meals per week).

My main issue with supermarkets, even Waitrose, is that I consider fish and seafood to be somewhat a specialist subject. I don't want someone less informed than myself to be handling my food.

I may have to bite the bullet on this one though.

Are they caught/dredged/dived for close enough to britain to make it here fresh?

Edit: ahh fair enough, you posted just before I did.
I'm always a knobhead for clicking through the 1 new reply in red thing.

I have seen along Marlborough Road a house with a 'Grimsby Fish' van parked up on the driveway.

I may have to commit myself to a cold call :)

Yeah right on the corner with BML....thinking about it I'm not sure I've seen it recently.

Most Grimsby fish is imported from Norway...

Last time I was up in North Lincs it turned out there are now no deep sea trawlers working out of Grimsby, so I wonder whether "Grimsby Fish" is a fair reflection of what the guy sells!

Queen scallops cooked simply as above.

King scallops.....wrap in streaky bacon and place on as skewer and grill with herbs and lemon juice.

Nice!!

Diver caught is best....many frozen Scallops can contain up to 40% ice glaze (water) and can be phosphate soaked...meaning nearly 50% is water..

Sorry to be boring...this is my bag.

I must admit the Ginger, Soy and Chilli recipe sounds lush......

So, you've never tried scallops before, but consider yourself better informed than trained supermarket employees.

Does this mean you'll not be eating fish unless sourced from outside of Swindon in the future then ?

In my vast experience Waitrose have the best fish counters.

Frozen Scallops are ok as not many are supplied fresh to Supermarkets who often thaw them out for counters.

Just check the label for water content and glaze.

I've got to agree with The Flash, Waitrose fish counters are generally pretty good. They just don't seem to be very good at gutting and scaling their fish, I always do it myself - but the actual specimens are better than the others.

Mitch Tonks - who used to own Fishworks before it went shit and he became compromised - always advises to avoid buying fish on a Sunday or Monday as they won't have been any landings on the weekend and so everything will be a few days old or frozen.

Scallops for me work really well with a quality piece of black pudding and sauteed apple.

For me, fry for no more than 2 mins on either side in a bit of butter with garlic - serve with a few slices of chorizo.  Don't try and do too much with them - they have a wonderful fresh and natural flavour.
