Just been round a mates house and he cooked up a HUGE Chili con carne. He rekons that the left-overs will have to be thrown out as you cannot re-heat kidney beans.

Does anyone know if you can? Or is it a health risk?

Yeah what a load of bollocks.

I always cook a huge chilli that lasts about 3 days.

Obviously I just scoop out what I need for each portion, you don't reheat the whole lot every time...

  Got to make sure that kidney beans are well cooked because they contain a toxin which is only broken down at a high temperature ...as long as they were well cooked first time round should be no problems.

Yeah reg is spot on. Kidney beans are dangerous first time round. If you survived the first batch you'll be fine with a reheat. As long as you heat it through properly like everything else.

I've got one of those food thingy certificates. I hope I'm not wrong.

It's rice which is dangerous. Got to be careful with rice.

I don't fucking know. I didn't go into that much depth when I was making it up. I'm not sure there's such a thing as an optical lobe either.

The real reason rice is dangerous is because the harmful things which live on it don't die when you boil it up. They turn into spores things and do a sort of hibernating thingy or something. That means the more times it's left at temperatures where the bad things can reproduce (basically not really cold or really hot) then the more risky it is.

It's pretty safe reheating rice as long as you cool it down quickly after you've cooked it the first time.

Something like that anyway. It's been over a year since I did my Food safety or whatever it's called course, and they didn't go into from a very sciency angle. I'm sure one of the forums many microbiologists can explain in better detail.

Rice is one of the top causes of food poisoning though.

Pineapples contain bromelain, which breaks down proteins.

Handling lots of pineapple chunks will remove your fingerprints.

I habitually get a Chinese, leave the leftovers (rice included) on the side, and eat the lot when i get in from the pub... it's never harmed me.

The beans may go a bit mushy when you reheat them, but seeing as it's in a chilli anyway it shouldn't matter so much.

do you ring around the takeaways on a saturday lunchtime to get them to deliver your weekly shop? extravagant, but i think we all dream of a life like that.

It's one of the dodgiest to under-cook in the first place- tapeworms. Gravid proglottids can carried in pork which will then make you more hungry in the coming weeks.

Obviously you need to cook chicken well too Dave.
