Title: Spag Boll Post by: michael on Monday, August 25, 2008, 12:00:08 The dish that anyone can cook.
Very bored of the standard, so I am going to try frying some chopped pancetta and mixing that in with the mince meat. I will let you know how I get on. Title: Re: Spag Boll Post by: Saxondale on Monday, August 25, 2008, 12:05:20 I do Spag bol with smoked bacon when I can be bothered. Very nice. and of course much red wine. :eatkf:
Title: Re: Spag Boll Post by: Simon Pieman on Monday, August 25, 2008, 12:06:48 Try making it with tagliatelle as well - that's pretty good.
Title: Re: Spag Boll Post by: michael on Monday, August 25, 2008, 12:08:22 Was tempted to go with tagliatelle actually, as it's easy to make, and the sauce is more likely to stick to it than it does with spaghetti.
Egg pasta is so much nicer than the dried effort. Title: Re: Spag Boll Post by: dell boy on Monday, August 25, 2008, 12:13:40 I do Spag bol with smoked bacon when I can be bothered. Its soooooooooooo easy to make your own too.
Plus, fresh herbs are much nicer than dried. Title: Re: Spag Boll Post by: Reg Smeeton on Monday, August 25, 2008, 12:27:10 Fresh pasta whatever its form is unbeatable. Title: Re: Spag Boll Post by: Luci on Monday, August 25, 2008, 12:28:59 No I haven't, is that the type they use to make Macaroni?
Title: Re: Spag Boll Post by: Reg Smeeton on Monday, August 25, 2008, 12:38:38 No I haven't, is that the type they use to make Macaroni? It's what any decent pasta is made from. Title: Re: Spag Boll Post by: michael on Monday, August 25, 2008, 12:47:13 Something else I can recommend is making your own pesto sauce.
Very very easy to do and tastes better freshly made than out of a jar. Title: Re: Spag Boll Post by: Sussex on Monday, August 25, 2008, 12:52:07 Something else I can recommend is making your own pesto sauce. Title: Re: Spag Boll Post by: Ralphy on Monday, August 25, 2008, 12:55:05 Always put half a bottle of red wine in my Spag Bol, gives it plenty of taste.
Title: Re: Spag Boll Post by: michael on Monday, August 25, 2008, 12:58:41 Half for me, half for you...
I will not be taking pictures I am afraid. That is not how I operate in my kitchen. Title: Re: Spag Boll Post by: Peter Venkman on Monday, August 25, 2008, 13:41:17 Pepperoni or chorizo chopped up and added gives it an extra zing...yummy
Title: Re: Spag Boll Post by: janaage on Monday, August 25, 2008, 13:53:40 Try making it with tagliatelle as well - that's pretty good. Ah yes, tagliatelli bolognese is much nicer, with added garlic, bacon (or parma ham) and wine. Nice. Title: Re: Spag Boll Post by: Barry Scott on Monday, August 25, 2008, 14:12:28 Pancetta works a treat in the old boll. Another nice twist is to roast the garlic and onions prior to cooking and cut them coarse as fuck. Also nice to use a nice amount of oregano along with fresh basil. Most Bolognese, imao, doesn't contain enough oregano, although too much will completely kill the dish. Chilli as well. Oh and have 2 or 3 meats. Nice. :D
I learned the other day what the biggest and most obvious reason is for Spaghetti Bolognese clearly not being an Italian dish. Did you know it's because an Italian rarely eats meat with Spaghetti, because Spaghetti is shit for holding the meat. Italians will often only eat a Bolognese style sauce with Fusili, Penne or another pasta capable of holding the sauce. Wasn't that the best thing you've ever heard? Title: Re: Spag Boll Post by: Simon Pieman on Monday, August 25, 2008, 14:29:15 Yeah I saw a programme about someone going to Bologna to find out what a traditional bolognese consisted of. It was quite a boring programme, but I did learn they don't use minced meat and they serve it with tagliatelle.

http://www.frenchflavour.co.uk/jams%20and%20marmalades/smoked%20garlic%2010%20heads.jpg It's the dogs bollocks alright....it lasts for a good while...and hung in the kitchen, keeps vampires at bay. I was a bit downcast when I used the last of it, you can get it here, but requires a bit of effort and is pricey. Title: Re: Spag Boll Post by: Bushey Boy on Monday, August 25, 2008, 16:20:54 Try some yellow or orange peppers chopped! tastes nice

Roast that and eat it on it's own, it's well nice... The women don't like you much afterwards though. Title: Re: Spag Boll Post by: Reg Smeeton on Monday, August 25, 2008, 21:23:36 Michael...
If you mean in the (looks for old doobie smilie...it's not there is it) sense, then, yes. If you mean in the purely culinery sense, then, no. Maybe your inverted commas suggests, some things listed as "smoked" probably are just injected with flavours...such as bacon, haddock and some kippers. Proper smoked kippers from somewhere like Craster are ace...was up there camping, a while back....whack them on the barbie...magic. Of course the kippers aren't caught by local fishermen anymore but imported from Norway, but the smoking bit is proper. Always a bit of pleasant afternoon telly was R&J. My favourite moment was seeing them interview Bill Clinton, Richard went into great detail about the time he was accused of shop lifting, explaining to the president that he knew how he felt during the how Monica Lewinski (sp?) affair. Pres.B.C looked a little bemused. Title: Re: Spag Boll Post by: Reg Smeeton on Monday, August 25, 2008, 23:02:14 Not a patch on this
