Sushi didn't really do it for me, but ceviche from South Amercia is nice - raw fish which gets 'cooked' when it's marinated in lime - very tasty stuff.

We accidentally caught and killed one before realising it was actually illegal. It was eaten anyway and apparently very tasty although I don't eat seafood personally. I think there are several varieties including red.
