Today's special is effectively just a chicken caserole. It includes..

Chicken thighs
Lot's of onion
Yummy Garlic
Some sliced up lemons (not waxed)
Fresh Thyme
White wine
Chicken Stock

Not quite rocket science - it's a nice 'chuck it all in the big caserole dish thing' sort of recipe. Fry of the chicken thighs in a bit of olive oil for a while. Take them out. chuck in the onions and garlic for some sizzling action, put the chicken back in with lot's of slices of lemons. pour in some chicken stock and wine and throw in the thyme.

Let it simmer away for a bit and reduce. And then chuck in the oven on a lowish heat (140 ish) to slowly cook away all afternoon.

I'm leaving the lid off mine in the oven for a while so that the stock and wine reduce a bit. I'll have a look in about 40mins and maybe put it back on.

Smells ace. I think this is gonna be tasty.

Sounds like the sort of thing that would go well in a  slow cooker......a great invention for those with a busy lifestyle....or even tax dodgers and dossers.

Wise words Reginald.  I got my slow cooker in the January sales, for £8 with a 3 year warrenty thrown in. Chuck stuff in, go to work, come home to a lovely dinner ready to be served  8)

i didn't like the coating on my sausage after i'd stuffed him though

There's a lot of enjoyment from knocking up a nice meal, although less if you're just cooking for yourself. Cooking for other people is where the fun is at. Unless you have a disaster then its a bit shit.
