This is probably going to be a stupid question.

We are (hopefully) completing on a new house on Friday - am I tied to their existing electricity provider or can I immediately move - I assume as I have no contractual relationship with the existing I am free to do whatever I want!

you are free to go with whoever, your new provider should do all the work with the existing supplier. You may get a small bill from the previous supplier for the time you were there to the time the new supply took over.

Take a pic on your phone of the meter readings, helps in case there is any confusion.
