I think it's something to do with the English public being too sensible to get excited about a patron saint that isn't English, never set foot in the country, and whose only claim to fame is the slightly dubious tale of having a bit of a dust up with an entirely mythical creature somewhere deep in the Palestinian desert where independent witnesses were a bit thin on the ground.
Why didn't England get their own saint instead of appropriating some Turkish bullshit artist?
