Evening, I have a memory of a German manager who got drink after winning the league and woke up in a bush? Did I make this up? If not, who was the manager?

Looks like it might well have been Branko Zebec, Croatian former coach at Hamburg SV  (Sport Verein)

"Schlief besoffen auf der Bank" meaning he slept on the bench in a drunken state (while a game against Dortmund was being played)
He'd missed the team bus and followed in his car. Stopped by the Polizei for driving very slowly on the Autobahn, well over the limit. His manager Günter Netzer fetched him from the police station and took him to the team hotel, where he gave "a brilliant team-briefing" and then carried on drinking.

A well respected and successful coach, with an alcohol problem.

I would have said no, but he seems to fit the bill.
