Title: Hot sauces
Post by: Sippo on Friday, March 14, 2014, 22:45:32
So who's a man or a mouse? I do like heat but these have beat me...

The beauty of them though are that they hand made by the infamous 'rib man'. They taste great.

This one always amuses me  http://www.chilliworld.com/SP6.asp?p_id=666.
I've got a few hot sauces based on naga chilliies but used very sparingly. Good for marinating meat in for barbecues and bringing ion a good sweat.

I went to Olivio's on Victoria Hill last night and one of our table had a starter of the spicy chicken wings which are marinanted and cooked in the Chef Challenge Hot Sauce.

He did it, but was seriously suffering!

Like that reg.

Went on a tour of Upton Cheney chilli farm (bath way) last year. Tried some of the 1 million plus schoville chili, a very small bit. Seemed OK at first. Then it hit. That 9M sauce on the burger is insane.

Bloke said they have chili eating contests and advise competitors to throw up after. Said it was most amusing when the macho ones didn't get picked up by an ambulance.

I tried one at a food festival a few years ago called Dragon's Blood.

I love hot food, but that was just insane.
I've never tasted anything as hot before or since.

They have a stall at the farmers market outside the Outlet Village every Sunday. They were also featured on this programme today (8:15 in):

They don't seem to have everything on their website to buy.

I love hot sauces. Wiltshire Chilli Farm are good, and I've had a few nice ones that I'll try and remember from other places.

Spiciest thing I've ever eaten was a chicken skewer in Seoul, from a street stall that sold them in 'mild', 'spicy' and 'strong spicy'. Had the latter and fuck me it was well named, ended up sweating violently from every pore and crying despite it being about 2 degrees. An American guy with me had some after giving it the big one and spent the rest of the evening on the loo.

Thermonuclear stuff.

The hot sauce emporium in St. Nick's market is well worth a visit. Got some blair's after death sauce from there. Used about a third of a bottle in 3 years. Don't bother using it to cook with any more, just put a bit on my finger to put on me tongue every now and then for a bit of a chilli high.

There's a bloke that used to review the sauces from there by chomping on a whole tablespoon of the stuff, filming it and the resulting burn and then stick it on YouTube. Hilarious. Complete nutter.

I've grown into spicy food for the opposite reason to you as the missus loves spicy food. I hate admitting to her that the food she has made is too spicy for me so I have grown to appreciate it more through necessity!

Work through the pain, you will soon get used to it and want even more and more, until you get to the Phaal stage.

I made a really hot phaal curry using fresh Naga chillies once; Jayo impressed me by battling through and finishing it.

You do build up a tolerance to the spice quite quickly. Stop eating spicy food and suddenly a jalepeno pepper becomes very very hot.

Title: Re: Hot sauces
Post by: Peter Venkman on Tuesday, March 18, 2014, 14:05:59
Phaals are ok but sometimes the heat does overpower the taste of the curry, although when you have built up a tollerance like Si says they become better, certainly more tollerable if not enjoyable as such, but the chilli rush is quite amazing.

But you do need to build up that tollerance before you can even remotely enjoy them.

The naga chilli is quite amazing although for taste I do prefer the scotch bonnet or habanero are my faves, great heat but with a lovely taste too.

Ah black pudding. Food of the gods to the true carnivore. It's almost verging on a Christopher Lee or a Vincent Price film flashback when enjoyed.

How is it best cooked though? I usually fry it in butter but that will probably deserve a stake (sic) through my heart from the purists?

Fry Bacon in a non-stick pan, when it's had a minute or so and enough of the fat has leeched out you can chuck the Black Pudding in then.

Mind you if it's some of this watery bacon that we have to put up with nowadays you're better off waiting till that water has kindly fucked off.

Good black pudding doesn't really need to be cooked in too much extra fat, as it should contain its own....but a bit of bacon juice does no harm.

Hahaha. You're lucky I didn't post a photo last night. Went with a mate for a pre-stag-weekend meat fix so the manager (that we've become mates with from being so regular) hooked us up with 'man-size lock-jaw burgers'.

A regular Lock-Jaw is as follows bottom to top: bun, pickles, pulled pork, burger, cheese, brisket, burger, cheese, burned ends, fry sauce then bun.

Basically our burgers were that and then some. You have to go! Go to either the St. Nicks stall or the Clifton Smokehouse in Bristol. :)

If you get used to spices you get used to them. You build up a tolerance. I doubt somehow that people are buying "big dave's so hot you piss fire" for the flavour, you're doing it to impress someone

I got some of this over Christmas and its probably one of the best hot sauces I've had in a long time.

Although its made with ghost chill its not unpleasantly hot. Its great mixed in with some bbq sauce or mayo for an extra kick too.

My favourite is Sriracha hot chilli sauce.

Sainsbury's sell the rooster brand for £3, Aldi sell the flying goose brand for £2.

If you like chilli and garlic this is the sauce for you. Beats Tabasco and Frank's easily. It's not stupidly hot either, just right.

Lemon Drop Pepper Sauce. Lemon Drops are quite hot to eat on their own, well lets just say it is a growing intensity. When used as a sauce it's milder so falls more to a habanero/jalapeno level yet retains it citrusy namesake flavour. Great in a chicken curry.
