My guess is Fontina, which is a cow's milk Italian cheese.  Made in the Aosta Valley, in the Alps since the 12th century.  I might be wrong however.

Raclette is a massive Swiss/savoyarde dish, you basically melt the raclette cheese under a grill and then scrape it over your plate of potatoes and cold meats.  It's ok but I much prefer a cheese fondue - about 90% of the restaurants in the ski resort I live in do both - great social way of eating but very hard to move after an hour spent stuffing melted cheese down your face.
