Have touched on this a little before, but have not really eaten meat for the last three weeks, and for the first time in about a year I am beginning to think that my UC is under control.

I really am beginning to feel well again, and I am sure that the new diet is working.

To all you veggies out there, could you possibly point me in the right direction of good on line recipe sites etc.

I have googled a lot of stuff but just came up with the usual "meat is murder" brigade

I like nice Salads, tomatoey stuff, had a 3 bean cobbler (with like scones on the top) tonight and it was lush.

Fish is a good option for me.................I like it and does not play me up

I am quite open minded about it all really, Ill try anything (except tofu and meat substitutes mate)

those veggie burgers/sausages we had at the BBQ were fucking lovely, so you can still be the man of the house and burn dead animals on an outdoor fire fred

Fred, just spoke to my mum and she says she has quite a few recipes. Stuff like the paella and a lentil bolognese, which I have tried and are actually pretty decent. Can you eat nuts? My mum makes the paella with cashew nuts.

None of it's really spicy stuff so I'll have butchers and post some stuff later in the week.

If you can't have bacon then Fried egg and mushroom sandwiches are pretty ace. Especially if you make it a double sandwich with a slice of fired bread in the middle. Mmmmm...

Cashew Paella

2 tbps oil
1 chopped onion
1-2 cloves garlic
4oz long grain brown rice
3oz cashew nuts
(1/2 tsp paprika)
1 tsp dried basil
1 red or green pepper in strips
5 sticks celery
1 pint boiling water
1 tin tomatoes sieved or liquidised
Salt & pepper to taste



Heat oil in frying pan. Add and fry onions and garlic for a few minutes.
Add rice, cashew nuts, (paprika) and basil and cook for a few mins turning mixture over so nuts and rice are slightly roasted.
Add peppers and celery to mixture.
Pour on 1 pint boiling water and add tomatoes. Bring to boil and simmer uncovered for 35-40 mins. You may need to check the amount of water content towards the end, but most should evaporate to make the mixture moist with rich tomato colour.

If you can take fish then I heartely recommend Monkfish (which has a very meaty flavour), a bit of risotto or flavoured rice maybe.

Not Shepherd's Pie

This will make 4 servings


9oz brown lentils
2 bay leaves
2 chopped onions
2 or 3 sliced carrots
1 tbsp oil
1 small tin baked beans
1 dessertspoon of brown sauce or branston pickle
2 lbs potatoes, boiled and mashed
A little margarine/butter
Salt & pepper

Rinse lentils and put them in a sausepan with bay leaves and cover with water so that it's half an inch above the lentils. Bring to boil and allow to simmer, adding in more water during cooking if necessary.

Meanwhile heat the oil in another pan. Fry the onions for 5 mins then add the carrots and fry for a further 5 mins. Tip in the lentils and the water in with the vegetables and simmer everything together until lentils are cooked (further 35 mins).

Mix the baked beans and the brown sauce or pickle into the cooked lentil mixture. Add salt and pepper to taste. Put the mixture into a casserole dish and cover with the mashed potato. Dot the top with margarine/butter and put into an oven on gas mark 5/6 for 25 mins or put under the grill untill the top has browned.

Agreed.

Stupid fish though, you ony eat the tail.
