I’ve never been much of a barbequer so I’m a bit novicy when it comes to the do’s and dont’s.
When finished do you clean the grills, as I would expect to, or leave them uncleaned to enhance the greasy goodness next time round as suggested by a neighbour?

I use a wire brush to get the crap off. I do wash in water too every now and then. oh, and if you're doing charcoal buy a chimney starter and your choice of lumpwood or whatever. Not firelighters it those easy start charcoal stuff

Don’t buy an Outback gas BBQ, the manufacturing quality is shocking and they don’t last. The first one I bought lasted ten years. The next about six then four. The current model is two years old. When the cover came off beginning of April I gave it a cursory wire brushing, scrape and brush down. The grills and the three burner hoods were kept in the garage over winter. So after giving the three burner pipes a light brushing to avoid blocking the small burner holes I gave them a tap to get the rusty dust off. The first burner broke in two...virtually rusted through. I have fixed it with a jubilee clip which is just wide enough to cover the diagonal crack and bits that have just gone. The thermometer on the hood broke after a year. In short next one is going to be a Webber.
For lighting charcoal use a hot air paint stripping gun. You’ll have it up and running in 5-10 minutes without any nasty fluid or firefighter smell. Obviously you’ll need a power source. Start at the back and work your way forward.

Sort of understand your sentiment WRT the thermometer but I found them useful particularly for things like large chickens and the odd leg of lamb.

I guess in relative terms to themselves they're ok, I've just found them to be wildly inaccurate. But if it worked for you, yeah very annoying when broken

A gas one does. A charcoal one uses charcoal.
