A client of mine currently has 15 mailboxes using a web based (IMAP) email system. They are struggling with the 2GB mailbox limit, inability to share calendars with each other and little things like not being able to set their Out of Office directly from Outlook . Does anyone have experience of using a hosted exchange service and can you recommend someone that is reliable and competitively priced? Thanks in advance.

Should move them all onto Google Apps for Business. Most the features, less of the cost.

No can do I'm afraid as the data needs to be stored in the UK. This also rules out Office 365.

Why's that? Customer or legal requirement?

Really? For email?
Think Microsoft host UK data within the EU, Dublin primarily. But that doesn't help you.
You want to make sure that hosting is guaranteed to be in and stay in the UK then. More and more providers are either reselling Microsoft services, or moving their servers to a cloud which means it could be hosted anywhere.

Yes I have seen this trend. Makes it difficult but have found a couple of suppliers today that have data centres in the UK and guarantee this.
